This restaurant is a unique collection of sustainability-focused individuals and like-minded local companies that collaborate to deliver an exceptional dining experience in a non-judgemental and comfortable space. Our team – led by Taylor Smith, Michelle Louise Arnold, Cameron Trezoglou and Alysse Brice – works together to brilliantly showcase Northern Colorado’s unique and vastly diverse flavors. Simply put, The Gold Leaf Collective is re-defining what it means to be truly locally-sourced because we value the impact that our menu has on our planet.
In an effort to keep our sourcing as localized as possible, we have never had – and to this day do not have – ANY accounts with ANY major food distribution companies – ie Sysco, Shamrock, etc. All of our ingredients are foraged locally by our kitchen staff, grown at one of the many local farms in Fort Collins, or produced by local companies that are dedicated to having a direct impact on our community’s economic and culinary systems.
These top notch ingredients paired with the culinary precision of our chefs result in menus that are constantly changing, and feature dishes so innovative and delicious that you may not believe the meal in front of you is actually 100% plant-based. In fact, you may even find certain elements of your dish to leave you wondering what exactly it IS you are eating. Our chefs spend countless hours experimenting with all types of unconventional ingredients, and pride themselves in discovering new ways to use these flavors they find in nature. Our entire staff is very knowledgable as to the sourcing, preparation, and presentation of everything that comes out of our kitchen, and we love sharing this knowledge with our customers because we know it really can have an impact on the the world for generations to come.
